Salted Codfish
Ingredients:
- Chopped chives and parsley sprigs
- 1/2 tsp freshly ground black pepper
- 1 tsp paprika
- 1 cup flour
- Olive oil for greasing
- 2 pounds salted codfish
- 2 cups milk
- 1/4 cup butter
- 1 tbs minced fresh chives
- 1/4 cup white wine
- 1 large onion
- 2 garlic cloves
- 1/4 olive oil
Preparation:
Preheat oven to 350F. In a saucepan, heat olive oil over medium heat. Add the garlic and onion, and sauté until soft but not brown, about 3 to 4 minutes. Add the wine, cover, and reduce the heat to medium-low. Simmer 5 minutes. Stir in the chives and butter. When melted, stir in milk, then set aside. Make sure cod has no bones. Cut the fillet into serving size pieces. Grease a glass baking dish with olive oil. In a bowl, mix together flour, paprika, and pepper. Dredge cod in flour and place in baking dish. Pour milk and onion mixture, bake for 30 to 35 minutes. Serve and enjoy.
