"Rolled Ham with Pineapple"

  • 1 fresh pineapple
  • 1 1/2 cup sugar
  • 1/2 cup water
  • 1 lb pressed ham
  • 1/2 cup fine brown sugar
  • 3 tbs pineapple syrup
  • 1 tsp vinegar
  • 1/2 tsp mustard
  • 1/8 tsp cloves


Peel pineapple, dice and pass through salted water. Strain and cook in water with sugar until syrup becomes sticky and pineapple takes on a crystalline appearance. Allow to cool and drain the syrup. Cut ham into 1/8" slices. Cut each slice into two. Place 1 tablespoon of pineapple on each slice, roll and fasten with toothpick. combine the remaining ingredients and pour over ham rolls previously placed in a greased dish. Cook in a 375 degree over fro approximately 45 mins. or until rolls are golden. Baste occasionally during cooking. Makes about 14 rolls. Garnish with pineapple and maraschino cherries.
