Rice with Vienna Sausages
Arroz con Salchichas
Serves 6
Ingredients:
- 1 12 oz. can Vienna sausages
- 1 tsp. vinegar
- 1 tsp. saffron
- 1/2 cup vegetable oil
- 1/2 cup dry cooking wine
- 1/2 tsp. cumin
- 1 small onion
- 2 1/2 cups water
- 1 bay leaf
- 3 cloves of garlic
- 1 lb. long-grain rice
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 can vegetables, drained
- 2 tsp. olive oil
- 1/2 cup tomato sauce
- 1 bell pepper
Preparation:
Cut Vienna sausages into bite-size pieces. Chop onion, garlic and bell pepper and place with sausages in a cast-iron pot or heavy skillet. Add oil and sauté for 5 minutes. Add water, vegetables, cooking wine, vinegar, tomato sauce, black pepper, cumin, bay leaf, salt and saffron. Brings mixture to a boil, add rice and cook for about 15 minutes over medium flame. Lower flame, stir, and cook covered for another 10 minutes or until rice is fully done. If grain is not completely soft, sprinkle on some more water, cook a little longer.
Tip: Frozen vegetables can also be used; add at the same time as the water.
