"Raw Vegetable Salad"

Ingredients:

  • 1 tbs unflavored gelatin

  • 1/4 cup water

  • 1 cup tomato juice

  • 1 tbs sugar

  • 1/2 tsp salt

  • 1/4 cup vinegar

  • 1 tbs lemon juice

  • 1/2 cup green pepper cun into strips

  • 1/2 cup grated raw carrot

  • 1/2 cup chopped raw cabbage

  • 1 red pepper chopped (canned)

  • 1 tbs oil

Preparation:

Soak gelatin in water. Heat tomato juice and dissolve sugar and salt. Add vinegar and lemon juice and allow to cool. Watch carefully and when sauce begins to set, add the remaining ingredients. Pour into individual molds greased with oil. When cold turn out onto lettuce leaves.
