- 2 cups onion
- 1/8 lb butter
- 1 1/2 cups consommé
- 1/2 tsp. Worcester sauce
- 4 slices toast
- 1/4 cup grated Parmesan cheese
Cook onion in butter until soft. Add consommé, water and Worcester sauce and cook over low heat for 25 mins. Cut toast in small squares and place in four individual bowls. Pour soup over toast and sprinkle with cheese. Place under broiler until golden.
CREAM OF ONION SOUP:
Use 1 3/4 cups of milk instead of water to thicken soup. Stir occasionally whilst cooking.
