Habanero Eggs

  • 1 tsp vinegar
  • 1/2 cup tomato sauce
  • 2 clove of garlic, minced
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1 small onion
  • 1/4 tsp black pepper
  • 1/2 bell pepper
  • 8 eggs


Place onion, garlic, bell pepper, oil, vinegar and black pepper in frying pan, cook for about 5 min. Add tomato sauce and cook another 5 minutes, Crack the eggs in a greased baking dish and pour the tomato mixture over the eggs. Bake in a preheated oven at 300F for about 10 minutes. Serve over slices of toasted bread, mashed potatoes, or rice. Add Tabasco to tomato sauce if you like spicy flavoring.
