Cuban Eggs

  • 2 eggs, well beaten
  • 1 cup bread crumbs
  • 2 tsp butter or margarine
  • 2 tsp tomato sauce


Hard boil eggs, cool and slice lengthwise. Remove and mash egg yolks. Mix all other ingredients with chopped yolks. Fill egg whites with mixture, pressing well. Beat raw eggs and dip stuffed eggs in beaten eggs and crumb twice. Fry in hot oil until golden brown. Serve hot.
