Corn Chowder
Ingredients:
- 1/4 tsp black pepper
- 1 tsp salt
- 3 garlic cloves, chopped
- 4 cups water
- 2 tsp vinegar
- 1 Spanish sausage
- 2 cans whole grain corn, or 4 ears of corn
- 4 oz tomato sauce
- 1/4 lb ham, cut in bite size pieces
- 1 medium bell pepper
- 1 cup potatoes
- 1 cup calabaza squash of any kind
- 1 medium onion chopped
Preparation:
In a frying pan place ham, chorizo, onions, bell pepper, garlic. Sauté for about 5 minutes , add tomato sauce salt and pepper; cook for another 2 or 3 minutes. Place mixture in a pot, add wate3r, corn, potatoes and squash. Cook over medium flame for about 20 minutes. If desired mash some of the potatoes and squash to thicken.
