Chayote
Ingredients:
- 2 tsp olive oil
- 1/4 tsp mustard
- 1/4 tsp black pepper
- 2 tsp vinegar
- 1 head lettuce
- 1/4 tsp salt
- 6 chayote
Preparation:
Boil chayote until tender, peel and dice. Mix vinegar, oil, mustard, black pepper and salt. Pour over diced chayote. Arrange on lettuce and place in refrigerator for 1 hour more. Chayote are a tasteless squash, but this dressing makes them a refreshing salad.
