"Butter Cream Muselina"
serves 6
Ingredients:
- 1 cup sugar
- 1/2 cup water
- lemon juice
- 1/2 cup egg yolks
- 1/2 lb butter
- 1 tbs vanilla
Preparation:
Boil sugar and water with a few drops of lemon juice until a light syrup is formed. Beat eggs yolks until very thick, add to hot syrup and continue to beat until stiff. Add the vanilla and allow to cool. Beat the butter and add egg mixture, beating for a further few minutes.VARIATIONS
ALMONDSadd 1/2 cup ground almonds when adding the butter to egg mixture.
CHOCOLATE
Add 1/2 cup bitter cocoa to egg mixture before cooling. Beat egg yolks with 1 tbs water.
COFFEE
Add Nescafe instead of vanilla or add coffee to syrup.
LIQUEUR
Add liqueur (kirsch, Curacao, etc.) instead of vanilla.
PRALINE
Add 1/2 cup ground nuts.
