"Beef with Plantains"

Serves 8


  • 2 lbs beef round
  • 1/2 cup oil
  • 1 tbs salt
  • 1 tbs paprika
  • 1/2 tsp pepper
  • 1/8 oregano
  • 1 bay leaf
  • 1 large onion
  • 3 cloves garlic
  • 1 green pepper
  • 1 can tomato sauce
  • 1 tbs vinegar
  • 1 cup dry wine
  • 3 plantains (neither ripe or green)


Cut the meat into 2" cubes. Fry in hot oil until brown and add the salt, paprika, pepper, cumin, oregano and bay leaf and then onion minced with garlic cloves. Sauté the onion a little, then add the minced green pepper with parsley. Allow to cook for a few minutes before adding the tomato sauce, vinegar and wine. Cover and cook over a low heat for 1 1/2 hrs. or until meat in tender. Cut the plantains into 2" pieces, combine with lemon juice and place in casserole with meat. Re-cover and cook slowly for a further half hour.
