Calabaza Fritters

  • Vegetable oil for frying
  • 1 and 1/2 cups flour
  • 1/4 tsp nutmeg
  • 1/2 cup sugar
  • 1 egg, slightly beaten
  • 2 tbs butter
  • 1 and 1/2 pounds calabaza


Cut calabaza flesh into one inch pieces and place in a large saucepan with enough water to cover. Brings to a boil over medium high heat. Cover, reduce the heat to low, and simmer twenty minutes. Drain calabaza, place in a bowl, mash. Measure 1 and 1/2 cups into large bowl. Add butter , egg, sugar, and mix until butter is melted and blended. Add nutmeg, add flour 1/2 cup at a time, mixing well. Heat oil in deep fryer to 375F. Drop dough, 1 tablespoon at a time. Fry for a few minutes. Remove and place on paper towels. Serve and enjoy.
