Sopa de Camarones a la Crema (Cream of Shrimp Soup)

1/8 lb. butter
4 tbs. flour
1/2 tsp. salt
1/8 tsp. pepper
3 cups milk
1 cup broth
1 slice of onion
2 sprigs of parsley
1 cup boiled and peeled shrimp
1/2 cup thin cream

Product Description

Melt butter and add previously blended flour, milk salt, pepper, onion and parsley. Add stock and stir over low heat to a light creamy consistency. Blend shrimp with a little cream and return all to heat for a further few minutes. Just before serving, add the remaining cream without allowing soup to boil. Serve individual bowls with cheese toast.
