Salpicon De Pargo (Snapper Loaf)

3 lbs. red snapper fillets
1 onion
2 red peppers
1 cup bread crumbs
2 tbs. dry wine

6 asparagus spears
1 tbs. salt
1/2 tsp. pepper
5 eggs
1 small can petit pois

Product Description

Grind raw fish with onion, peppers and asparagus. Add bread
crumbs soaked in wine and eggs beaten with salt and pepper. Add the
petit pois and pour into a mold greased with butter. Place in a 350°F
oven, using a double boiler until center is cooked. Allow to cool,
remove from mold and garnish as desired. Serves 12.
