Russian Salad (Ensalada Rusa)

Serves 15 approx.

4 cups potatoes (2 lbs. approx.)
2 cups beets (diced)
1 cup carrots
3/4 cup petit pois
1 cup cooked chicken
1 cup cooked lobster
1 cup ham
1 1/2 tsp. salt
1 cup mayonnaise

Product Description

Peel, dice and boil potatoes until soft. Allow to cool before combining with other ingredients. Canned carrots and beets may be used if desired. Mix all ingredients with mayonnaise and salt. Serve very cold on a bed of lettuce.
