Grind the meat and combine with salt, pepper, minced onion, cheese
and beaten eggs. Bind together with the cracker crumbs and form into
a cylinder shape. Dip three times in beaten egg and cracker crumbs
and fry in hot oil until browned all over. Add the onion rings, lightly
saute and add the remaining ingredients. Cook over a low heat in a
covered casserole for 40 mins. This dish may be served hot or cold.
Garnish with chopped parsley.
