Pudin de Pan (Bread Pudding)

1/2 lb. milk bread
3/4 cup sugar
4 eggs
1 cup sugar
4 tbs. butter
2 tbs, dry wine
1/2 cup seedless raisins
1 tbs, flour
2 cups milk
1/4 tsp, nutmeg
1/4 tsp. cinnamon
1/2 tsp. vanilla
1/2 tsp. almond extract
1/2 cup toasted almonds

Product Description

Preheat oven to 350°F. Cut bread into pieces and soak in milk. Make
caramel by placing sugar in a small casserole and stir over heat until
melted. Bathe a 6 cup capacity mold with the caramel. Beat eggs with
sugar, melted butter and wine. Add the cinnamon, nutmeg, vanilla,
almond extract, bread soaked in milk and the raisins and almonds
coated in flour. Pour into mold and bake in a double oven for approx-
imately 2 hours or until center is dry. Allow to cool before turning out
from mold.
