Cut fillets in oval shapes 4 x 2. Place in a shallow casserole and cover
with milk. Add salt, pepper and bay leaf and cook for a few minutes:
when milk boils the fish is cooked. Do not allow fish to break. Place
fish in a greased dish. Beat egg whites until stiff, add mayonnaise and
lemon juice and cover fish with this mixture. Brown under broiler at
450°F. Garnish with lemon wedges and olives to represent the eyes
and tail of the fish. Serves 4 approx.
