Soak beans for two hours (approximately). Change the water and boil until they begin to soften. Strain saving the water. In a 2 1/2 to 3 liter covered dish place alternate layers of beans, chopped onion and bacon. Mix the remaining ingredients with 1 cup of bean water (do this over heat so that mixture boils) and pour over bean layers, adding further layers, adding further water to fill the dish. Cover and cook in a 250° oven for 7 to 8 hours. Check from time to time adding more water if beans begin to dry. Remove lid during the last hour to brown top.
