Pollo Marengo (Chicken Marengo)

2 2 lb. chickens
2 tbs. oil
3 tbs. butter
1 tbs. salt
1/2 tsp, pepper
1/2 tsp. nutmeg
3 tbs. flour
1 onion
2 cloves garlic
1 cup dry wine
1 can tomato sauce
1 can red peppers
1/2 cup mushrooms
1 tbs. chopped parsley
8 eggs
8 slices of bread

Product Description

Clean and quarter chicken: brown in hot butter and oil. Mix salt.
pepper, nutmeg and flour and dust chicken whilst cooking, turning
pieces to completely cover with seasoning. Add onion and crushed
garlic: when golden, add wine and cook covered until chicken is tender.
Add crushed red peppers, tomato sauce and mushrooms. Cook for a
further ten minutes during which time fry eggs and bread. Place
chicken covered with sauce and chopped parsley at the center of a
large serving dish and surround with eggs and fried bread. Serves 8.
