Cut chicken into eight pieces. Place remaining ingredients in a bag
and shake well. Place two or three pieces of chicken in the bag and
shake well to cover. Repeat with the remaining chicken and allow flour
to dry. Heat 1/4 inch of oil in a frying pan. Brown chicken on all sides
(approx. 20 minutes). cover and cook over a very low hcat for a further
30 minutes. If lid does not close well. add one tablespoon of water.
Remove lid and cook uncovered for 10 mins. to allow chicken to crisp.
