Sopa de Platanos (Plantain Soup)

Serves 6

4 quarts beef or vegetable stock
1 cube chicken bouillon
6 large green plantains, sliced cross-
wise into medium-sized chunks
1 bay leaf
4 garlic cloves, minced
1 large onion, sliced
1 tbsp coarsley chopped fresh culantro,
for garnish
1/4 tsp salt
