Guiso de Quimbombo con Pollo y Bolas de Platano (Okra Stew with Chicken and Plantain Dumplings)

Serves 6

1/3 cup oil
1 chicken (2 1/2 lb.)
1 onion
1 green pepper
2 cloves garlic
1 tsp. salt
1/4 tsp. pepper
1 can tomato sauce
1/3 cup vinegar
1 cup consommé
2 cups dry wine
3 cups water
3 lemons
1 lb. okra
2-3 plantains

Product Description

Heat oil and brown chicken, onion, green pepper and crushed garlic. Add salt, pepper, tomato sauce, vinegar, consommé and wine. When the chicken is half cooked, add okra cut in rings, water and lemon juice, and cook until okra is tender. Add plantain, previously boiled, puréed and made into balls.
