Fricase de Pollo Camagueyano (Chicken Fricasee)

Serves 6

4 lbs. of chicken cut in quarters
2 cloves garlic
18 small seeded Spanish olives, cut in halves
1 green pepper diced small
1 large onion, diced small
1 can tomato sauce
3 tbsp pure olive oil
1/3 cup capers
1 tsp, salt
1/4 tsp. pepper
1 1/4 cups dry wine
1 lb. potatoes cut in large pieces

Product Description

Cut chicken into quarters dress with crushed garlic, sour orange
juice and onion and green pepper rings. Brown chicken quarters in hot
oil, add the onion, green pepper and orange juice and then the tomato
sauce, capers,olives, wine, water, salt and pepper. When this is half cooked,
add the potatoes and finish cooking. Just before serving, garnish with
sweet and strips of sweet red peppers
