Filete Habanero (Havana Filet Mignon)

Serves 2

1 lb. center cut beef tenderloin
1 tsp, salt
2 cloves garlic
1 tsp. gravy seasoning
1 tsp. vinegar
2 slices sweet ham
2 slices Gruyere cheese
2 eggs
1 cup cracker crumbs
2 cups oil

Product Description

Cut fillet into 4 half-inch thick steaks. Marinate for at least an hour
with crushed garlic, salt, gravy seasoning and vinegar. Join the steaks
two by two, placing a slice of ham and cheese in the centre and fasten-
ing with toothpicks. Dip twice in beaten egg and cracker crumbs and
fry in hot oil until brown on both sides. Serves 2.
