Clean the fillet and brown in hot butter. Place the bacon slices in the
bottom of a glass oven proof dish. Blend the egg yolks with the parsley,
oil, thyme, pepper, wine and consomme. Pour over the fillet and cover
with onion rings and bay leaf. Bake in a 350°F oven for 30 mins.

40 mins. Strain the sauce adding the flour and mushrooms and cook,
stirring constantly until it thickens. Cut the fillet in 1″ slices, place in a
greased dish and sprinkle with grated cheese and cracker crumbs.
Place for a few minutes under the broiler. Serve with the sauce.
