Ensalada de Pollo (Cuban Style Chicken Salad)

2 lbs white chicken meat , fully cooked
1 cup finely chopped celery
1 cup tender canned sweet peas. Well drained.
½ cup can salted almonds, chopped
3 hard boiled eggs, chopped
12 Spanish olives stuffed with peppers, cut in halves
1 ¼ cups mayonnaise
1/2 tsp. vinegar
1/2 tsp. salt
2 apples, peeled and chopped
1 small can of sweet pimentos
1 tbs. lemon juice

Product Description

Soak the chopped apple with the lemon juice and set aside.
Cut chicken into small pieces, and place on large bowl. Add celery, sweet peas, almonds, hard boiled
eggs, olives, softened cream cheese, mayonnaise, vinegar and the chopped
apples. Add salt to taste. Garnish with strips of red pimentos. Cover and refrigerate for a few hours before serving.
Serve with soda crackers or toasted bread.
