Cocido Español (Spanish Stew)

Serves 8

1 lb. chick peas
5 quarts of water
1lb. beef round  cut in halve
1 bone for soup (beef)
1  ham bone
½  chicken bone in,  cut in halve.
4  small Spanish style chorizo, whole.
½ lb salami  cut in 4 pieces
1/4 lb. thick  bacon, cut in large pieces
½  lb. ham cut in large chunks
1 lb. small potatoes
1 lb. small onions  whole
1 leek
2 bunches collards
1 turnip
1 green pepper seeded, cut in  halve.
6 tomatoes, seeded and  cut in halves
salt and pepper to taste

Product Description

Soak the chick peas in water for a couple of hours and rinse in clean
water. Bring the water to boil and add the chick peas, beef, chicken
bones, salami, ham and bacon together with the onion, pepper and
tomatoes (if desired, these last three ingredients may be first fried and
added when the chick peas are cooked). When the chicle peas and meat
are half cooked, add the remaining ingredients and cook over low heat
until everything is tender.This stew is served in three parts. First the strained broth, to which
bread, noodles or rice may be added. Secondly the vegetables and then
the meat.
