Bacalao a Lo Cubano (Cuban Style Codfish)

1 tbs. butter
1 tbs, chopped parsley
2 eggs
1 cup cracker crumbs
2 cups oil
2 tbs. minced pickles
2 tsp. mustard
1 tsp, salt
SAUCE
4 grated hard boiled eggs
1 tbs. olive oil
1 tbs. vinegar
2 tbs. minced pickels
tsp. mustard
tsp. salt

Product Description

Soak fish overnight. Change water the next morning and simmer
until cooked. Flake fish. Cook potatoes and mash. Saute onion in but-
ter and combine with fish and potatoes. Add parsley and a little salt if
necessary. Make balls from this mixture, roll in flour and brown in hot
oil. Prepare sauce by mixing all ingredients and pour over fish balls.
Serves 4.
