Asopao Oriental (Oriente’s Chicken and Rice)

Serves 8


3 lbs chicken cut in quarters
1/4 cup oil
1/4 lb. ham
1 large   onion
2 cloves garlic
1 green pepper
1/2 cup tomato sauce
1 tbs. capers
1/2 cup olives
1/4 tsp. pepper
1/2 tsp. oregano
2 tbs. vinegar
1 Ib. Valencia  rice
4 cups chicken broth , low salt
2 cups dry wine
1 sweet  caned green peas drained
1 cup grated cheese
1 small can red peppers
1 tbs. salt

Product Description

Brown chicken and ham in hot oil. Add the onion, garlic and green
pepper and when lightly browned add tomato sauce, capers .
olives, salt, pepper, oregano, vinegar, broth and wine. Cook over low heat for about 20 minutes. Increase heat to bring to a boil  and then add rice.   Let it come to a boil again and then cover and cook over medium heat until rice is done. Before serving, add petit pois and garnish with red peppers. This dish should be of soup consistency so it is important to add rice appproximately 1/2 hour before serving to avoid overcooking
