Aguacate Relleno (Stuffed Avocado Salad)

Serves 4

2 medium avocados
salt, pepper, oil and vinegar
1 tsp. Worcestershire sauce
2 cups small shrimp, cooked.
3/4 cup mayonnaise
1/4 cup ketchup
1 small can red peppers
1 lettuce
4 stuffed olives
Parsley for garnishing.

Product Description

Cut avocados in half, remove seed and peel. Prick several times with a fork and
dress with salt, pepper, oil and vinegar. Fill avocados halves with shrimp.
Mix mayonnaise with ketchup and worcestershire sauce and pour over
shrimps. Chill in refrigerator for 2 hours.
Garnish with olives and red peppers. Serve on lettuce leaves.
