Black Beans Salad

Serves 8

INGREDIENTS:

4 cans black beans in water and salt (15 oz each can)
 1 large onion, chopped fine
 1/2 cup of extra virgin olive oil
 2 tsp ground cumin
 Juice of 2 large lemons
 Hot sauce
 Ground Pepper
 Table salt
 1 large red pepper, chopped fine
 1 large green pepper chopped fine
 1 bunch of fresh parsley, discard stems and chop leaves.
 Leave a few sprigs for garnish.
 2 tsp of fresh cilantro(coriander), discard stems, chop leaves.

Product Description

Preparation:

Drain the black beans and refrigerate until chill.. Mix all other ingredients together. Add the drained black beans and mix without breaking the grains. Hot sauce, salt and pepper to taste. Cover and refrigerate. Garnish with parsley sprig.
