Ensalada de Papas (Potato Salad)

Serves 6

2 lbs. potatoes peeled and diced.
1 tsp. salt
1/4 cup chopped onion
1/4 cup chopped green pepper
1/2 cream cheese (4  oz. total)
1/2 cup mayonaise

Product Description

Cook diced potatoes in boiling salted water. When soft, drain and
add onion and green pepper. Place in a covered casserole and store in
the refrigerator for one hour. Beat the cream cheese with the mayonnaise
and add to the potatoes. Serve on a bed of lettuce.
