Ingredients:

  • FILLING:
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1 cup beef stock
  • 1 tsp light brown sugar
  • 2 tbss capers
  • 1/4 cup chopped roasted red peppers
  • 1/4 chopped raisins
  • 1 large onion
  • 1 pound lean ground beef
  • TOPPING:
  • 1 tbs olive oil
  • 1/3 cup milk
  • 1/4 cup chopped mild green chiles
  • 1 egg, slightly beaten
  • 1/2 tsp baking powder
  • 1 tbs sugar
  • 1/2 tsp salt
  • 1 tbs flour
  • 3/4 cup cornmeal

Preparation:

Preheat the oven to 350F. In a skillet, brown the meat. Add the onions, raisins, roasted peppers, capers, brown sugar, beef stock, salt, chili powder, and pepper. Cover and let simmer for 15 minutes. Uncover and simmer 5 minutes, place meat filling in lightly greased 2 quart casserole and set aside. In a bowl, mix together corn meal, flour, salt, sugar, and baking powder. Stir in the egg, green chilies, milk, and oil. Evenly spread cornmeal topping over the meat mixture. Bake 25 minutes. Serve and Enjoy.
