"Ox Tails with Cappers"

Serves 6

Ingredients:

  • 2 ox tails
  • 1/2 cup oil
  • 1 lb onions
  • 6 cloves garlic
  • 3 green peppers (baked and peeled)
  • 1/2 cup parsley
  • 1 can tomato sauce
  • 1/2 cup dry wine
  • 2 cups red wine
  • 1 cup cappers
  • 1 1/2 tbs salt
  • 3/4 tsp pepper
  • 1/4 tsp oregano
  • 1/4 tsp cumin
  • 1 tbs vinegar

Preparation:

Remove excess fat from the tails and cut in to 2" pieces. Wash and dry well. Brown in hot oil. Remove tail pieces from oil and sauté the onions, garlic, green peppers and finely chopped parsley. Return tail pieces to casserole together with tomato sauce and then add the remaining ingredients. Combine well and cook over medium heat until ox tail is tender (3 hrs aprox.) More red wine may be added if necessary.
