Plantain Fu-FuWith Chicharron

Serves 4

Ingredients:

  • 1 lb of chicharron (pork cut in small pieces and fried)
  • 6 cups of water
  • 4 green plantains
  • 1/2 tsp. salt

Preparation:

Cut both ends of the plantain and lengthwise through the skin without cutting into the flesh; cut into three pieces. Place in pot with water, salt, and lemon juice to avoid staining the pot. Cook for about 45 minutes or until a fork goes through. Keep in the hot water until just before serving. Peel plantain and place in frying pan. Pour oil and onions, pepper, garlic and pork. Mash together well, taste, and add salt if needed.

Variation:

Replace pork with cooked and chopped bacon.
