"Bread Pudding"

A Cuban Tradition

Serves 8

Ingredients:

  • 4 slices milk bread

  • 1 3/4 cups milk

  • 4 eggs

  • 3/4 cup sugar

  • 1/2 tsp. cinnamon

  • 1 tsp. vanilla

  • 1/4 tsp. salt

TOPPING

  • 6 oz. cream cheese

  • 1 small can peaches

  • 3 tbs. peach syrup

  • 1 morello cherry

  • 1/4 tsp. nutmeg

  • 1/2 cup raisins

  • 1/2 cup walnuts

Preparation:

Grease a 3 or 4 cup capacity mold with one tbs. of butter or if desired line with caramel. Chop the bread in squares, without removing the crust. Soak in milk whilst beating eggs with sugar, vanilla, cinnamon, and walnuts. Pour into mold and cook at 15 lb. pressure for 15 minutes. with one cup of water in the cooker. Allow to cool before removing from mold. Top with cream cheese beaten with syrup and garnish with peaches and the cherry. Serves 8.
