By the way... keep an eye on the sodium content. It figures out to about 300mg/serving. Based on this, no other sodium needs to be added. For dietary restrictees, this rice mix might not be an option. It has its sofrito in dehydrated form, but a fresh, homemade sofrito (sans salt) will not negatively affect this rice dish. Chicken or seafood stock must be sodium free or low sodium... but you be the judge. If sodium is a problem for you... well... go from scratch all the way. Or if you don't mind your fridge smelling like fish from leftover paella... get the kit. I bet the sodium is high in those, too!

No matter what the brand, I don't particularly like using paella kits. The primary and only reasons are based on the can of seafood mix that comes with each kit. Not tasty. Final result smells very fishy and not of fresh seafood, of course. Rather than buy a kit and leave the mix out (wasting money), I rather use this Vigo Spanish Yellow Rice as an alternative. Finding bomba and arborio rice is not always available at local markets. This rice usually is, and inexpensively. I presume that the saffron in this rice mix is authentic. However, the grain is medium... not too sticky and has a bit more binding character than long grain. Very flavorful and makes a very good paella. You want seafood? Try fresh or frozen. Of course, all other proper paella-cooking techniques apply. They show the rice in the above picture, but using it for paella is not mentioned in the subtitles. Either way... it works!
