Tamal en Cazuela (Cuban Tamal Casserole)

Serve 4

1 lb. pork loin
2 cloves garlic, minced
1 lemon
1/4 cup oil
1 onion
1 green pepper
1/3 cup tomato sauce
1/4 cup dry wine
2 cups  fresh ground corn
3 cups water
1 tbs. salt

Cut meat into small cubes and season with garlic and lemon. In a  pan,  over medium
heat,  cook the pork using its own fat, together with the onion, pepper, tomato sauce and wine.
fat. Mix the corn with the water, strain, and add to the meat. Cook for
approximately 1 hour, stirring occasionally. Season with salt .
