Stuffed Peppers. (Pimientos Rellenos)

Serves 6.
1/2 lbs. ham
2 tbs. oil
1/2 onion
1/4 tsp. garlic powder
1/2 cup tomato sauce
1 tbs. dry wine
1 vinegar
2 cups cooked rice
2 eggs
1 tsp. salt
1/8 tsp. pepper
6 large green peppers
6 tsp. cracker crumbs
6 tsp. grated cheese

Product Description

Grind ham and onion. Sauté in hot oil and add garlic, tomato sauce, wine, vinegar and rice and cook for 5 minutes, stirring constantly. Lower heat and add beaten eggs together with the salt and pepper. Fill peppers with this mixture. Sprinkle with grated cheese and cracker crumbs. Cook for 45 minutes in a 375° F oven.
