Arroz Frito a lo Cubano (Fried Rice Cuban Style)

3 tablespoons vegetable oil
2 garlic cloves, minced
1 small onion, peeled and chopped
3 cups cooked long-grain white rice
1 chorizo sausage, peeled and chopped
1 cup small shrimp, cooked
1 cup smoked-pork strips
Ground ginger to taste
Soy sauce to taste
2 scrambled eggs, cooked

Heat oil in a shallow frying pan, and saute garlic and onion. When the onion
starts to become translucent, add the cooked rice, and stir continuously over
high heat for about 5 minutes.
Add the chorizo, shrimp, and smoked pork, and continue cooking and
stirring. Add the ginger and soy sauce, and continue cooking and stirring
quickly. Lower heat, cover, and cook for 7 or 8 minutes.
Add the scrambled eggs, and stir the rice thoroughly, seasoning with more
soy sauce as needed. Serve immediately.
